Last summer, Kirk and I became pretty obsessed with this Curry Roasted Naanwich. It ticks all the boxes for me- quick, healthy, satisfying and super tasty! If you have followed the blog for a while, you will know that I love a good curry, (and naan, come to mention it!), but roasting summer vegetables with the aromatics I usually use in the winter months was quite the revelation for me, and something I have been revisiting with zeal this Summer!

Curried Ratatouille- Emma's Little Kitchen

Inspired by Erins Naanwich, todays recipe takes its cue from the traditional french ratatouille, except roasted, and with an Indian twist. The result is a relaxed, hands-off dish with beautiful depth of flavour and gorgeous colour. I like to pair this curried ratatouille with rice, but any grain will do. A handful of cashews or a drizzle of raita are also wonderful here.

Curried Ratatouille with Rice

Curried ratatouille is the perfect way to enjoy all of your favourite summer vegetables!

Serves: 4 servings
Ingredients
  • 1 red pepper, diced into 1 inch chunks
  • ½ red onion, largely diced
  • 1 cup cherry tomatoes (about 20)
  • 1 courgette diced into 1 inch chunks
  • ½ medium aubergine, diced into 1 inch chunks
  • 1 tbsp olive oil
  • 1 heaping tbsp curry powder
  • generous pinch of sea salt
  • To serve:
  • rice or other grain
  • lime wedges (optional)
  • fresh coriander, finely chopped (optional)
Method
  1. Preheat oven to 425F/220C
  2. In a large roasting dish, toss together vegetables, oil, curry powder and salt. Roast for 25-30 minutes until the vegetables are tender and starting to tinge brown in places
  3. Meanwhile, cook the rice according to package instructions
  4. Serve the ratatouille alongside the rice and garnish with finely chopped fresh coriander and a lime wedge for squeezing!

If you don’t fancy turning your oven on in the heat, add the curry-vegetable mixture to a foil packet and cook on the grill!

You guuuyyyysss! In just a couple of short weeks I will be flying across the atlantic to spend a little time at home with my family. Yay! I’m so excited for all things England- the normal-sized portions of comfort food, the drizzly weather, the long walks, the cosy pubs! Theres just one small glitch- a transatlantic flight with an infant, including a 6 hour overlay in Atlanta… gahh!

So why would we put ourselves though that? Well, my sissie is getting married, hooray! I would say thats a pretty good reason. So, speaking of my sissie (seamless segway…!), she was the person to turn me on to the magical combination of sweet potato, pineapple and coconut milk (thanks sis!).

It is fantastic on its own, or with rice or naan. It also freezes nicely and makes terrific leftovers. I am urging you to make a big batch today so you can reap all of the sweet, warming benefits. Sweet Potato Pineapple Curry

This spicy-sweet sweet potato and pineapple curry is vegan, simple to make and will warm you from the inside out.

Serves: 6
Ingredients
  • 1 tbsp coconut oil or any other flavourless oil
  • 1 medium onion, thinly sliced
  • 2 medium sweet potatoes, peeled and cut into 1 inch chunks
  • 1 tbsp curry powder
  • cayenne pepper or chili powder to taste (I add about ½ a tsp of cayenne, but go with what you like!)
  • 15oz/400g tin of coconut milk
  • 15oz/400g tin of crushed pineapple
  • 3 generous handfuls of baby spinach
  • fresh coriander to garnish (optional)
  • rice or naan to serve (optional)
Method
  1. Heat oil over medium heat in a large, lidded skillet
  2. Add the onion, and saute until softened
  3. Add the sweet potatoes and curry powder, and give everything a good mix. Put the lid on the skillet and cook for about 5 minutes until the sweet potato starts to get slightly tinged at the edges
  4. Add the coconut milk and pineapple to the pan, give everything a good stir until well mixed. Simmer, covered for about 25 minutes until the sweet potato is tender
  5. Add the spinach and stir until just wilted (just a minute or so!)
  6. Serve in bowls with rice or naan, sprinkle a little fresh corainder on top, if you wish!

Feel free to change the greens! I love spinach with this, but kale or chard would work really well too.

A light and refreshing side dish, a perfect compliment to a spicy curry.

Ingredients
  • 1 tbsp olive oil
  • 1 small onion, diced
  • ½ tsp turmeric
  • zest of one small lemon
  • 1 cup brown rice
  • 2 cups water
  • 1 cup green peas (either fresh or frozen and defrosted)
  • juice of one small lemon
Method
  1. Warm olive oil over medium heat, add onion and cook for a couple of minutes until softened
  2. Add turmeric and lemon zest to the pan and give everything a good stir (it should smell amazing!)
  3. Add the rice to the pan, and toss it in the oil-onion-spice mix so that it is thoroughly coated
  4. Add the water, and put the lid on the pan
  5. Bring pan to a simmer, and then reduce the heat to its lowest setting
  6. Cook slowly for about 35 minutes until those tell-tale holes start puckering the rice's surface, and the liquid is absorbed.
  7. Squeeze the lemon juice over the top and toss in the peas, with as few moments as possible, mix the peas into the rice with a fork
  8. Seve with chopped fresh coriander, fresh mint, or flaked almonds if desired
