My Go-To Salad Dressing
I enjoy salad any and all times of the year, but something about the Summer makes me CRAVE them. I chalk it up to bounty of fresh vegetables that are available, and the warm weather making me reluctant to turn on the oven. Besides using lovely, fresh ingredients, I think its really important that you tie your salad together with a really great dressing. I have never understood why there are entire supermarket aisles dedicated to bottled salad dressings. I know that most people (myself included!) don’t have the time to cook three meals from scratch every day, but a salad dressing takes just seconds to throw together, and they taste so much better than the packaged stuff. The added bonus is that you probably have most of the ingredients you will need already in your pantry, and none of them are gunky chemicals! Today I’m sharing my “Go-To Dressing”.
I have been making it for years, and its the perfect accompaniment to any green salad. - 6 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp dried thyme
- 2 tsp whole grain dijon mustard
- 2 tsp maple syrup (or honey!)
- pinch of salt and pepper
- Simply add all the ingredients to a mason jar, screw on the lid tightly, and shake with vigor until the dressing is well mixed. Repeat immediately before dressing your salad.

What a great-looking dressing, Emma! I love adding honey or maple syrup to my vinaigrette dressings too. You know, I think people don’t realize how easy it is to make their own dressings. We’ve been brought up to think it’s just something you buy. I felt the same way with tomato sauce for a long time. Once you try it, you never go back!
