Whole Wheat Chocolate Chip Banana BreadAnyone else overbuy bananas just so you can make Banana Bread? Until recently, this tactic worked like a charm for me, but lately, James has thrown me off my banana game. We now have three people in the house who like to eat a banana a day (and one dog, but rarely is he indulged…!). This means I’m having to buy a near crazy number of bananas when I go to the supermarket. Last week, the cashier even asked me why I had so many?!

Well, because I love them. In smoothies, in pancakes, in cookies, and of course, in banana bread.

Whole Wheat Chocolate Chip Banana Bread

Todays recipe has become my new go-to banana bread. It’s  made with whole wheat flour and olive oil, but is beautifully moist. It’s sweetened with just a little coconut sugar, but is deliciously sweet as can be. Finally it’s dotted with dark chocolate chips, so it holds magical powers.

Whole Wheat Chocolate Chip Banana Bread

Ingredients
  • 6 tbsp olive olive (or melted and cooled coconut oil)
  • ½ cup coconut sugar
  • 2 tsp vanilla
  • ¼ cup milk (whatever you have to hand)
  • 2 eggs
  • 3 medium banananas, mashed
  • 1¾ cup whole wheat pastry flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • ⅔ cup dark chocolate chips
Method
  1. Preheat oven to 350F, line a loaf tin with parchment paper, set aside.
  2. In a medium bowl, whisk together oil, sugar, vanilla and milk until combined. Then whisk in the eggs, and the mashed banana. Set Aside
  3. Whisk together the flour, baking powder, cinnamon and salt. When they are well combined, stir in the chocolate chips
  4. Tip the wet ingredients into the bowl with the dry ingredients and in as few movements as possible, stir until *just* combined. (This is VERY important, over mixing could make your banana bread dry and tough)
  5. Bake for 55 minutes- 1 hour in the center of the oven

I know, I know. It is not like me to post a sweet treat immediately after a dessert recipe, BUT I was in a pinch, friends! Blueberry season is drawing to a close (sob!), and I have not one, but TWO recipes to share with you before it does. Will you forgive me? Of course you will, because I come bearing banana bread. Special banana bread, made with crunchy cashew nuts, beautiful sweet blueberries, healthy whole wheat flour and just a smidge of sugar.

The inspiration for this cashew blue banana bread came from my favourite breakfast spot back in my old Michigan stomping ground. I would normally order the vegetarian breakfast burrito, but if I was in the mood for something sweeter, I would always opt for their cashew blue pancakes.

I’m not sure what gave my the idea to throw them in my banana bread batter one day, but I’m ever so happy I did! The cashew nuts are a beautiful compliment to the sweet blueberries. Mixed into banana bread, the cashews provide a satisfying texture, and the blueberries offer a pop of sweet tang.  Perfect for a cheeky sweet breakfast, dessert or a snack. This cashew-blue banana bread is something you need in your life before blueberry season ends!

Make the most of blueberry season with this whole wheat cashew blue banana bread!

Ingredients
  • 6 tbsp olive oil
  • ¼ cup maple syrup
  • ¼ cup brown sugar
  • 2 tsp vanilla extract
  • ¼ cup milk (regular, almond, whatever you like)
  • 2 eggs
  • 3 medium very ripe bananas, mashed
  • 1¾ cups whole wheat flour
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp salt
  • ½ cup finely chopped cashews
  • 1 cup blueberries (fresh or frozen, if frozen don't bother defrosting)
Method
  1. Preheat your oven to 350F/180C
  2. Line and grease a 9x5 inch loaf pan, ser aside
  3. In a medium bowl, whisk together the oil, maple syrup, brown sugar, vanilla and milk until well combined. Mix in the eggs, and then the mashed bananas. Set aside.
  4. In a large bowl, whisk together the flour, baking soda, cinnamon and salt. Add the wet ingredients to the dry, and stir until *just* combined.
  5. Add the cashews and blueberries to the mix, and fold in gently in as few movements as possible. You want to be especially careful if you are using frozen blueberries, as you may end up with grey banana bread!
  6. Pour the batter into the tin and bake in the center of the oven for 50-60 minutes until a knife comes out clean. Check the bread at about 40 minutes, if the top appears to be browning but the center is still uncooked, lay some foil over the top of your bread and continue baking

Notes

Substitute melted coconut oil with the olive oil if you prefer

Substitute honey for maple syrup if you prefer

Bonus Tip! Buy extra bananas next time you are at the shop, and freeze half when they get ripe. Defrost when you are ready to bake into your favourite banana baked good (have you tried these?!), or smoothie!

Hello! Apologies for the hiatus, I have been back home in England for a visit! I had some much needed catchup time with family and friends, and the last two weeks have been a blur of cosy pubs, riverside runs with my mum, negotiating the tube, and a lot of food.  Back to Michigan now, and I wanted to tell you all about my favourite smoothie recipe- Dexter’s Breakfast Smoothie.

Dexters Breakfast Smoothie? Yes, this is a smoothie named after my dog. We discovered some time ago that Dexter LOVES bananas, possibly more than he would a juicy steak or sausage (although we have never tested that theory). One lazy Sunday morning I combined a couple of bananas with another favorite of his, peanut butter, and the result was this creamy vegan smoothie. It’s absolutely yummy, my trusty Golden Retriever has impeccable taste.

This is very adaptable too, use almond butter, use regular milk, soy milk, rice milk… pick your poison! Although I agree with Dex, bananas and peanut butter are like a marriage, a perfect union.

Creamy vegan (or not) breakfast smoothie with bananas and peanut butter.

Ingredients
  • 1½ cups Unsweetened Almond Milk
  • 2 Medium Ripe Bananas
  • ¼ Smooth Peanut Butter
Method
  1. Simply throw everything into a blender and blend until smooth!
Notes
The components of this smoothie are very interchangeable, almond butter would also work well here. I used unsweetened almond milk but regular milk, soy milk or rice milk would all do the trick.
