Whole Wheat Chocolate Chip Banana BreadAnyone else overbuy bananas just so you can make Banana Bread? Until recently, this tactic worked like a charm for me, but lately, James has thrown me off my banana game. We now have three people in the house who like to eat a banana a day (and one dog, but rarely is he indulged…!). This means I’m having to buy a near crazy number of bananas when I go to the supermarket. Last week, the cashier even asked me why I had so many?!

Well, because I love them. In smoothies, in pancakes, in cookies, and of course, in banana bread.

Whole Wheat Chocolate Chip Banana Bread

Todays recipe has become my new go-to banana bread. It’s  made with whole wheat flour and olive oil, but is beautifully moist. It’s sweetened with just a little coconut sugar, but is deliciously sweet as can be. Finally it’s dotted with dark chocolate chips, so it holds magical powers.

Whole Wheat Chocolate Chip Banana Bread

Ingredients
  • 6 tbsp olive olive (or melted and cooled coconut oil)
  • ½ cup coconut sugar
  • 2 tsp vanilla
  • ¼ cup milk (whatever you have to hand)
  • 2 eggs
  • 3 medium banananas, mashed
  • 1¾ cup whole wheat pastry flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • ⅔ cup dark chocolate chips
Method
  1. Preheat oven to 350F, line a loaf tin with parchment paper, set aside.
  2. In a medium bowl, whisk together oil, sugar, vanilla and milk until combined. Then whisk in the eggs, and the mashed banana. Set Aside
  3. Whisk together the flour, baking powder, cinnamon and salt. When they are well combined, stir in the chocolate chips
  4. Tip the wet ingredients into the bowl with the dry ingredients and in as few movements as possible, stir until *just* combined. (This is VERY important, over mixing could make your banana bread dry and tough)
  5. Bake for 55 minutes- 1 hour in the center of the oven

This was not supposed to be a post about cookies. For months I had a glorious Valentines breakfast bun recipe in my head- light flaky buns with swirls of strawberry baked to perfection and then topped with a lemon glaze. Sounds good right?! Unfortunately I just couldn’t bring it together. I had a series of experimental flops, and in the end I gave up. Worst of all, they were incredibly cumbersome to make, and I wasted many a nap time up to my elbows in dough with absolutely nothing to show for it.

Enter the MOST SIMPLE cookie you will ever meet. Just four ingredients, one bowl, and about 10 minutes in the oven. Happy Valentines Day Darling!

Naturally I cut these babies into heart for Valentines Day, but they can be recreated for any Holiday- Stars for Christmas, Bunnies for Easter, Spooky Bats on Halloween… the list goes on and on. It really is a perfect cookie recipe to have in your back pocket. So I will keep working on those Strawberry Breakfast rolls for you, but in the meantime, have a cookie!

These simple almond hearts are gluten-free, refined sugar free, and vegan! Plus they only require 4 ingredients, one bowl, and about 10 minutes to make!

Serves: about 20 small cookies
Ingredients
  • 1 cup almond flour/almond meal
  • ¼ tsp cinnamon
  • 1½ tbsp maple syrup or honey (if you don't need them to be vegan)
  • ¼ tsp vanilla or almond extract
Method
  1. Preheat oven to 300F/150C, and line a baking sheet with parchment paper, set aside. Cut down the long edge of a sandwich bag to make (like picture), and set aside.
  2. In a small bowl, combine the almond flour, cinnamon, maple syrup and vanilla extract, stir with a spoon, and then knead the dough together with your hands until you get a sticky ball
  3. Remove the dough, and put in your cut sandwich bag. Roll out to about ¼ inch thick, and then lift the top flap of our sandwich bag. Cut out as many shapes as you can, and place them on the baking sheet. Reform the dough to a ball, and roll it out again, cut as many shapes as you can. Repeat this process until all of your dough is cut into shapes
  4. Bake the cookies for about 8-10 minutes until the edges are golden. The center may still seem a bit soft, but thats ok. Remove from the oven and let them cool for just a minute before you carefully remove them to cool completely on a wire rack

If you grew up in the UK, you may also have found a Terry’s Chocolate Orange occupying your stocking on Christmas morning (Its not Terry’s, its mine!). And after I had bashed it on the corner of my bed for long enough to break it into segments, I would wolf it down for a pre-breakfast snack. Hey, Santa only comes once a year!

For this reason, any kind of chocolate orange treat just tastes like Christmas to me, including this uber-delicious chocolate orange granola bark. Warning, the rich dark chocolate, toasty granola crunch and warm citrus vibes make this bark highly addictive. Honestly, once I nibble on a little bit I CAN.NOT.STOP! So please proceed with caution friends.

Just make sure you make enough for yourself too!

Chocolate Orange Granola Bark- Emma's Little Kitchen

Chocolate Orange Granola Bark

Ingredients
  • 2 cups (about 350g) dark chocolate chips
  • zest of 1 orange
  • ½ tsp cinnamon
  • 1 cup granola* (about 150g)
  • ¼ cup dried apricots (optional)
Method
  1. Line a baking sheet with a large piece of wax paper or parchment paper
  2. Put the chocolate chips, orange zest and cinnamon into a large bowl Fill a saucepan with a couple of inches of water, and set the bowl snugly into the saucepan. Make sure that the water is not touching the bottom of the bowl, and will NOT touch the bottom of the bowl when simmering (this is VERY important you don't want to scorch the chocolate- it will turn into a grainy nightmare...!)
  3. When the chocolate is completely melted, remove it from the heat and quickly fold in the granola and apricots. Turn the mixture out onto the lined baking sheet in a thin layer using a spatula. You will need to work quickly so the chocolate doesn't set
  4. Place the tray in the fridge, and allow to set for at least an hour before breaking it into chunks and devouring 🙂

Notes

*Use a relatively plain granola (this is a good option). If your granola contains fruit you may want to skip or reduce the dried apricots.

Dried apricots can be substituted for dried cranberries or dried cherries.
