Lemon Chia Energy Bites- Emma's Little Kitchen

If you have been reading this blog for a while, or you follow me on instagram, you probably know that running is a passion, or maybe even a compulsion of mine. If you know me in real life, you definitely know it. Many of you also know that I spent most of January and February of this year limping around with a nasty injury that preventing me from running at all. This was totally miserable for me (and TOTALLY miserable for my long suffering hubby), but I can happily report that I am back on track (ha, punny!), and getting my mileage back to about 30 miles a week. Two immediate consequences of my recovery were:

  1. A cheerier demeanor
  2. A ferocious appetite

Enter lemon chia energy bites. They cheerily compliment my mood, but more importantly, provide a delicious and convenient boost of energy post or pre run. Wether running is your thing or not, they make a really tasty snack, and last a good week in the fridge.

Lemon Chia Energy Bites

Ingredients
  • 2 cups pitted dates, chopped
  • ½ cup oats
  • ½ cup flaked coconut
  • juice and zest of 1 small lemon
  • ½ tsp almond extract (optional, but delicious!)
  • 2 tbsp chia seeds
Method
  1. Put all ingredients into a food processor, and process until the ingredients are well combined and a large dough-like ball forms
  2. Remove from the processor, and roll into small balls

I was watching a clip of my favourite lady Nigella making Granola Bars the other day, and she described medjool dates as “the most delicious edible glue”. Isn’t that perfect? She’s right (obviously…!), medjool dates add the most wonderful sticky, caramely, natural sweetness to any recipe, and thus, they make the perfect no-bake granola bar ingredient.

When time permits, I always prefer homemade granola bars to shop bought ones. Healthier, whole ingredients, and they just taste better to me. This is my current favourite bar- a toasted oat and coconut base, with crunchy cashews, and a drizzling of dark chocolate for a little indulgence. So delicious!

Ingredients
  • ¾ cup chopped raw cashews
  • 1½ cups oats
  • ¾ cup unsweetened coconut flakes
  • 1½ cups pitted, chopped dates (medjool if possible)
  • 6 tbsp maple syrup or honey (if not vegan)
  • 6 tbsp peanut butter or almond butter
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • pinch of salt
  • ⅓ cup dark chocolate chips
Method
  1. Line a 9x9 inch pan with two sheets of cling film (plastic wrap) so that all four sides are covered. Push your fingers into all of the corners to ensure that it fits tightly
  2. Tip the nuts, oats and coconut into a medium saucepan, and warm over a medium heat. Toast the nuts, oats and coconut in the dry pan stirring constantly. When the coconut turns a golden brown colour, immediately remove from the heat and tip into a large bowl (the coconut can burn very easily!)
  3. Return the saucepan to the heat, and add the chopped dates, maple syrup, nut butter, vanilla, cinnamon and salt. Stir everything until it has melted together and the dates start to break down into a sticky sauce-lie mixture (like in the picture above). Remove from the heat, and tip into the bowl with the dry ingredients. Stir everything until well combined
  4. Tip the mixture into the lined pan, and press it flat with your fingers and pop in the fridge to chill
  5. Put the chocolate chips in a microwave safe bowl, and heat in the microwave in 20 second increments, stirring between each time, until the chocolate is melted. Drizzle over the top of the bars and allow to set in the fridge before cutting into slices

Ok, onto these Gingerbread Granola Bars…! I’m sticking to my strong suite again today- healthy snacks! I have posted many quick bites on the blog, and of all of them, these are my absolute faves! These bars contain all of the warm spices of gingerbread with the chewy, nutty texture of a classic granola bar. Absolute perfection!

Gingerbread Granola Bars

Ingredients
  • 1 cup pitted dates
  • 1½ cups rolled oats
  • ½ cup whole raw almonds
  • ¼ chopped walnuts
  • ¼ cup pumpkin seeds
  • ¼ cup honey (or agave/maple syrup if vegan)
  • ¼ cup peanut butter )or almond butter)
  • 1 tsp ginger
  • ½ tsp cinnamon
  • pinch nutmeg
  • 1 tsp vanilla
  • 1 tbsp molasses
Method
  1. Line a 9x9 inch baking tray with cling film (plastic wrap), set aside
  2. Put the dates into a food processor, and process until the dates form a sticky dough-like ball
  3. In a large bowl, combine the date "dough" with the oats, almonds, walnuts and pumpkin seeds. Set aside
  4. In a small saucepan, melt together honey, peanut butter, ginger, cinnamon, nutmeg, vanilla and molasses over a low heat, stirring constantly
  5. When the honey-peanut butter mix is warm and well mixed, pour the mixture over the date-oat mix
  6. Stir thoroughly until fully combined, press into the 9x9 inch baking tray, and chill in the fridge for at least 20 minutes
  7. Cut into 8 rectangles

This recipe is very adaptable- you can play with the nut and seed combinations and even replace some nuts with a little dried fruit!
