These pancakes are so worth the wait, and  so worthy of that seven-word-long-title. But before we get into the pancakes, fluffy and luscious as they are, I want to natter a bit about The Great British Bakeoff. Do you watch?! Alrighty, back to these healthy whole wheat greek yoghurt blueberry pancakes. These babies came about as a bit of an accident. I woke up with a fierce craving for blueberry pancakes (hey, it happens!), but I wasn’t able to make my go-to recipe as we were out of milk. Searching the fridge, I realised I still had a good amount of greek yoghurt left, and so began my search for a whole wheat greek yoghurt pancake recipe that didn’t require any milk.

Whole Wheat Greek Yoghurt Blueberry Pancakes

Once I found a recipe that looked like it had good bones, I fiddled around a little, and came up with a recipe that I was really happy with. Despite being made from whole wheat flour, and thick greek yoghurt, these pancakes are wonderfully fluffy, and almost have a buttermilky tang to them. The blueberries provide that satisfying pop of sweetness, and a generous pour of maple syrup is NOT optional.

Healthy Whole Wheat Greek Yoghurt Blueberry Pancakes

Ingredients
  • 1 cup whole wheat pastry flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1½ cups whole milk plain greek yoghurt
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup blueberries
  • Coconut oil or butter for cooking
  • Maple syrup and extra blueberries for topping (optional)
Method
  1. In a large bowl, whisk together the flour baking soda and cinnamon. Set aside
  2. In a medium bowl, whisk together yoghurt, eggs and vanilla. Add the wet ingredients to the dry, and stir with a wooden spoon until just combined. Gently fold in the blueberries.
  3. Let the batter rest for 10 minutes
  4. Warm a nonstick pan over medium heat, and add a small amount of coconut oil or butter to melt. Using a ladle, drop small blobs of batter into the pan. Wait until the bottom of each pancake is set, and little air pockets being to appear on the top side. Flip them over and cook on the second side until golden brown
  5. Serve with extra blueberries and maple syrup!

Notes

You can use regular whole wheat flour in place of whole wheat pastry flour, but I found that the pastry flour made for a lighter pancake.

You can use plain (non-greek) yoghurt for this recipe, but I do prefer the result of greek yoghurt, they tend to be fluffier.

You can also use a flavoured yoghurt here if you want to experiment.

Blue cheese is one of those divisive foods, either you love it or hate it. I am partial to strong flavours and am definitely partial to a cheeky slice of blue cheese (my favourite, by the way is Garstang Blue, and you should check it out if you ever find yourself in the North West of England!!). Eating Blue Cheese is discouraged during pregnancy, so my love affair with the stuff took a little hiatus last year and I was surprised to find that I found the taste of it overwhelming after James arrived. I felt cheated! All those months of longing, and I struggled to finish a slice!

Not to be perturbed by (yet another) weird postpartum quirk, I persevered, and am now pretty much back in the stinky cheese game. During that time of self imposed blue cheese rehabilitation, I whipped up this gorgeous broccoli stilton quiche. When cooked, the stilton melts into the egg mixture, and its distinctive taste becomes so much milder. Paired with the fresh broccoli and a nutty whole wheat crust, it makes for an incredibly easy, tasty and portable lunch or brunch. I like to serve it with a simple green salad, or eat it chilled and plain.

Broccoli Stilton Quiche

Ingredients
  • Crust:
  • 1½ cups whole wheat flour
  • ½ cup butter, melted
  • 2 tbsp milk
  • pinch of sea salt
  • Filling:
  • 1 cup of broccoli, chopped into small florets (about ½ head)
  • 1.5 cups milk
  • 4 eggs, beaten
  • ½ cup stilton (about 120g)
  • Salt and Pepper to taste
Method
  1. Preheat oven to 375F/190C
  2. Grease a 9 inch pie dish, set aside
  3. In a large bowl, combine flour, butter, milk and salt with a fork, keep stirring until a dough forms (you may have to get in there with your hands at the end). Press the dough into the greased pie dish, and pop it into the fridge while you prepare your filling
  4. Bring a large pot of water to the boil, add broccoli and cook for 3-4 minutes until tender, but still with a bite. Drain well and allow to cool while you whisk together the rest of the filling ingredients. If you're in a rush you could plunge them into an ice bath, but I usually don't bother 🙂
  5. In a medium bowl, whisk together the eggs and milk with a little salt and pepper. Crumble in the stilton, and whisk again to combine
  6. Remove the crust from the fridge, and arrange the broccoli florets in the crust in a single layer. Pour the cheesy egg mixture over the top.
  7. Bake in the oven for 35-40 minutes until the filling is set

I would love to tell you that these naan bread pizzas stave off my occasional, but nonetheless intense pizza cravings. However, they do not.

You know those days when you want to order take out, but that little voice is reminding you that you will most certainly regret that decision afterwards? This naan bread pizza is for those nights.

You can make them in about ten minutes flat, the clean up is minimal, almost nonexistent actually, and they will fill up your tummy and satisfy that need for melty-cheesy goodness. I highly recommend  pairing this with a generous glass of red wine, yoga pants and House of Cards on the telly.

Mushroom & Swiss Naan Bread Pizza

This mushroom & swiss naan bread pizza is the cheats way to a mid-week pizza fix!

Serves: 2-4
Ingredients
  • 2 whole grain naan
  • 2 tbsp pesto (store bought or homemade- see notes)
  • 1 cup mushrooms, sliced
  • 4oz/115g swiss cheese, thinly sliced
  • 2 sprigs fresh thyme, or 1 tsp of dried
  • 1-2 tbsp balsamic glaze (see notes)
Method
  1. Preheat oven to 425F/220C
  2. Spread each naan with pesto, go right to the edges
  3. Next, place the mushrooms on the naan in a single layer, then layer on the cheese, and sprinkle everything with thyme
  4. Place on a baking tray and bake for about 10 minutes, until the cheese is bubbling. Remove from the oven and drizzle balsamic glaze over each pizza

Notes

For ease, you can use a good store bough pesto here, but if you’re feeling ambitious this recipe from the Kitchn is my go-to pesto.

I always keep some balsamic glaze to hand (because it is SO GOOD!), if you don’t have any, its very easy to make, here is a good tutorial.

This is more of a concept than a hard and fast recipe. The topping potential for the naan pizza is infinite! Please let me know if you stumble across a good combo.
